spaghetti squash with tomato sauce

Spaghetti squash is a great low fat, nutritious substitute for pasta – it has a good somewhat crunchy texture and a mildly sweet flavor. Serve spaghetti squash with tomato sauce, olive oil or butter-flavored spread.

Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. Cut squash lengthwise in half and scoop out the seeds and the stringy flesh.
  3. On a baking sheet or dish, place squash halves flat side down and add 1/4″ or so water to the pan.
  4. Bake in over for 35-40 minutes, until squash is tender.
  5. This is the fun part (especially if you don’t have much of a life – ha ha) – using a fork, scrape out the insides of the squash – it comes out like pieces of spaghetti!
  6. Put in a bowl, top with your choice of: olive oil, tomato sauce, butter, salt and pepper.

Sweet! You can also do this in the microwave. Same as 2,3 above but put in microwave for around 10 minutes. I usually check it a few times during the microwaving to see how it’s coming along.

Easter has us thinking about chocolate!

We can’t really help it! We make a lot of very delicious things here at Yummy Vegetarian Recipes. Chocolate isn’t one of them (yet). It seems kind of complex, and that you would want to be an expert. But just thinking about Easter makes us think about chocolate – white chocolate, dark chocolate, which is usually vegan, and milk chocolate. We love to shop locally, but around us all there seems to be are the supermarket brands – and some good, but expensive, chocolate bars in the co-op. But what about for quality, delicious, chocolate bunnies?! I for one just can’t get into buying from Hersey’s, Nestle’s and the like.

Last year, Ms. Yummy found the answer – and sent out some really amazing chocolate to her family and friends. It was really so good that we want to let our readers in on it for this year. Krause’s Chocolates, from just up the road in Saugerties NY, a 3rd generation chocolate maker is simply the best online chocolates. Now my mouth is watering. They make all kinds of wonderful stuff, and have a lot of different bunnies and also boxes of hand dipped chocolates…. with caramel, nuts…
I could go on and on, but I won’t.  Just get some!

And yes, I asked, and the “Extra Dark” varieties they have are vegan, and 72% cocoa although they don’t advertise it.
