arugla egs rice and beans recipe

Delicious and simple to make. This serves 4

Ingredients:

  • 1 cup cooked white or brown rice
  • 1 small can black cans (rinse and drain)
  • 4 free-range chicken eggs
  • 2 plum tomatoes, chopped
  • 4 handfuls of arugula

Directions:

  1. cook your rice or use your re-heated leftover rice
  2. fry up your egg
  3. heat your beans
  4. Assemble as follows:
  5. Layer handful of arugula, 1/4 cup rice, 1/4 of the beans and 1/4 of the tomatoes. Place fried egg on top.
  6. Sprinkle with hot sauce!
