Delicious and simple to make. This serves 4
Ingredients:
- 1 cup cooked white or brown rice
- 1 small can black cans (rinse and drain)
- 4 free-range chicken eggs
- 2 plum tomatoes, chopped
- 4 handfuls of arugula
Directions:
- cook your rice or use your re-heated leftover rice
- fry up your egg
- heat your beans
- Assemble as follows:
- Layer handful of arugula, 1/4 cup rice, 1/4 of the beans and 1/4 of the tomatoes. Place fried egg on top.
- Sprinkle with hot sauce!
