Eggless egg salad, hmmm, as a lover of egg salad, this tofu based eggless salad cuts the mustard….
- 1 package extra firm tofu, drained well
- 1/3 cup vegannaise
- 1-2 tbsp yellow mustard
- 1 tsp onion powder
- 1 1/2 tsp salt
- 1 chopped carrot
- 1-2 pickles, chopped
- chopped scallions to taste
- 1/4 tsp turmeric, to give it a yellow color
- Mash the tofu up in a large bowl.
- Add all the ingredients and mix well.
- Let stand for a bit to let the ingredients mesh.
- Serve on toasted whole grain bread with lettuce and tomato.
