Q: How will I get enough protein in my diet if I become a vegetarian or vegan? Asked by nearly everyone I meet..... USA
A: Americans seem to be obsessed with protein. The fact is that we do not need huge quantities of protein. It is very easy to get plenty of protein in your diet. Beans (lentils, chickpeas, black beans), soy (tofu, tempeh, veggie burger, etc.), peanut butter, grains (quinoa, brown rice), whole wheat bread, nuts and seeds have some and often much protein. The important point to remember is to eat a varied healthful diet. This will provide you with adequate protein.

 

Cooking Tip: Reducing the amount of fat, sugar or salt

In most recipes you can cut back on the amount of fat, sugar or sodium in the recipe. Generally, I have reduced the amount of each by 1/3 and the recipes have always tasted delicious. For example, if a recipe calls for 1 stick of butter, I use 2/3 stick. In addition, by reducing the amount of cheese or using a low-fat alternative, you can still make a great recipes with less fat and calories. Note: If making bread or something that requires yeast, be sure to use the recommended amount of salt.
