The ultimate vegetarian dish… full of vitamins, protein, and GREAT taste and easy to cook… The whole family will enjoy this dish, whether vegetarian or not.

Serves:
6-8 persons

Ingredients:

  • onion grinded
  • 3 cloves garlic grinded
  • 3 spoons of vegetable oil
  • pinch of salt and vegete(or 1 vegetable stock cube)
  • 2 cans of choppped tomatoes
  • 1 can of black eyed beans*
  • 2 cans of white beans*
  • 2 cans of chickpeas*
  • 1 can of green peas*
  • 1/2 cup of water
  • 1 bag of spinach
  • 8 carrots, finely grinded
  • 50/100gram of feta cheese
    *Please drain the cans!

Directions:

  1. Grind a large onion and 3 cloves of garlic and fry them on 3 spoons of oil but do not let the onion get brown, instead add 2 cans of chopped tomatoes and add the black eyed beans, white beans, chickpeas and green peas and let them cook for about 10 mins.

  2. Add the carrots, spinach and cheese then cook on low heat for 20mins with the lid on and stir occasionally.

  3. Make sure the dish is slow cooked because this will bring out the flavours.
