Grind a large onion and 3 cloves of garlic and fry them on 3 spoons of oil but do not let the onion get brown, instead add 2 cans of chopped tomatoes and add the black eyed beans, white beans, chickpeas and green peas and let them cook for about 10 mins.
Add the carrots, spinach and cheese then cook on low heat for 20mins with the lid on and stir occasionally.
Make sure the dish is slow cooked because this will bring out the flavours.
