This is one of my favorite soups. It can be made in a matter of minutes as red lentils cook quickly and don’t require any soaking! It has a rich delicious flavor, a bit like a golden split pea soup.
Ingredients:
- 2 cups red lentils
- 6 cups water
- 1 vegetable broth cube
- 1 onion, chopped
- 1 tbsp olive oil
- 3 large carrots, cut in bite-sized chunks
- Salt and pepper to taste
Directions:

Heat olive oil in bottom of soup pot and cook onion over medium heat until transluscent – about 3 minutes.

Add lentils, vegetable broth, carrots, salt and pepper and cook for 20 minutes.
- If you would like the thin the soup, just add more water.
That’s it. Eat….Yum!!
