  red lentil soup recipe

Red Lentil Soup (vegan)

 
 

This is my favorite soup. It can be made in a matter of minutes as red lentils cook quickly and don't require any soaking! It has a rich delicious flavor, a bit like a golden split pea soup.

Ingredients:

  • 2 cups red lentils
  • 4 cups water
  • 1 vegetable broth cube
  • 1 onion, chopped
  • 1 tbsp olive oil
  • 3 large carrots, cut in bit-sized chunks
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in bottom of soup pot and cook onion over medium heat until transluscent - about 3 minutes.

  2. Add lentils, vegetable broth, carrots, salt and pepper and cook for 20 minutes.

  3. If you would like the thin the soup, just add more water.

    That's it. Eat....Yum!!
