This is my favorite soup. It can be made in a matter of minutes as red lentils cook quickly and don't require any soaking! It has a rich delicious flavor, a bit like a golden split pea soup.
Ingredients:
2 cups red lentils
4 cups water
1 vegetable broth cube
1 onion, chopped
1 tbsp olive oil
3 large carrots, cut in bit-sized chunks
Salt and pepper to taste
Directions:
Heat olive oil in bottom of soup pot and cook onion over medium heat until transluscent - about 3 minutes.
Add lentils, vegetable broth, carrots, salt and pepper and cook for 20 minutes.
If you would like the thin the soup, just add more water.
