Yum, Rice Pudding for vegans.


  • 1 1/2 cups soy or rice milk, unflavored
  • 2 cups cooked basmati rice
  • 1/4 tsp cinnamon
  • 1 tbsp cornstarch
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1/3 cup raisins


  1. In bowl, whisk milk and cornstarch together.
  2. In saucepan, add all the ingredients except the raisins & vanilla.
  3. Bring to a boil, stirring constantly.
  4. Add the raisins.
  5. Reduce the heat and cook on low for 15 minutes or so until the pudding thickens. Stir occasionally. Stir in vanilla. Serve.
