Yum, Rice Pudding for vegans.
- 1 1/2 cups soy or rice milk, unflavored
- 2 cups cooked basmati rice
- 1/4 tsp cinnamon
- 1 tbsp cornstarch
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1/3 cup raisins
- In bowl, whisk milk and cornstarch together.
- In saucepan, add all the ingredients except the raisins & vanilla.
- Bring to a boil, stirring constantly.
- Add the raisins.
- Reduce the heat and cook on low for 15 minutes or so until the pudding thickens. Stir occasionally. Stir in vanilla. Serve.
