Tasty little lemony dish, here. Seitan with spinach, pine nuts and lemon.


  • 1 cup seitan, sliced long and medium thin (1/4 inch)
  • 1 tbsp olive oil
  • 1/4 cup chopped onion
  • 1 cup spinach, chopped
  • 1/3 cup pine nuts
  • 1 tbsp lemon


  1. Heat the oil in a skillet and cook the onions until translucent.
  2. Add seitan and quickly brown it.
  3. Add the spinach and pine nuts & stir and cook 2 minutes.
  4. Remove from heat, add lemon juice over seitan.

Serve over Wild Rice…..Yum
