Tasty little lemony dish, here. Seitan with spinach, pine nuts and lemon.
Ingredients:
- 1 cup seitan, sliced long and medium thin (1/4 inch)
- 1 tbsp olive oil
- 1/4 cup chopped onion
- 1 cup spinach, chopped
- 1/3 cup pine nuts
- 1 tbsp lemon
Directions:
- Heat the oil in a skillet and cook the onions until translucent.
- Add seitan and quickly brown it.
- Add the spinach and pine nuts & stir and cook 2 minutes.
- Remove from heat, add lemon juice over seitan.
Serve over Wild Rice…..Yum
