The potato tortilla is one of the most common dishes that you will find in Spain. It is great for traveling vegetarians. In Spain they serve "tortilla de patatas" for breakfast, lunch or dinner. It is available in the tapas bars as well. It is often made into a sandwich by stuffing the tortilla into crusty bread.

Ingredients

  • 2 medium potatoes, peeled and sliced thin or cubed
  • 1 small onion, chopped
  • 4 eggs
  • olive oil
  • Salt and pepper to taste

Directions:

  1. Fry potatoes in enough oil to cover (traditional) or boil the potatoes. Drain.
  2. In skillet, sauté onion in oil over medium heat until golden and tender.
  3. Mix eggs in large bowl.
  4. Add potatoes, sautéed onion, salt and pepper. Mix.
  5. In medium non-stick fry pan, heat 1 tbsp olive oil and add mixture. (egg mixture should be around 1-2" thick)
  6. Cook on low until sides and bottom are firm.
  7. To turn fritatta, cover with plate and flip tortilla onto it. Add oil to the pan and return flipped tortilla.
  8. Continue cooking until underside is browned and egg is firm.
