I love breakfast. Breakfast for dinner!

Ingredients:

  • 3 eggs
  • 1 tbsp water
  • 3 tbsp tomato sauce or fresh chopped toms
  • 1 cup fresh washed spinach

Directions:

  1. In bowl, combine eggs with water and give a good whisk or stir with a fork.
  2. Pour egg mixture into an oiled & heated skillet (on medium heat)
  3. Cook egg mixture for 1 minute and add spinach and tomatoes.
  4. Cook until egg is firm (about 3 minutes).
  5. Salt and pepper to taste.
