I love breakfast. Breakfast for dinner!
- 3 eggs
- 1 tbsp water
- 3 tbsp tomato sauce or fresh chopped toms
- 1 cup fresh washed spinach
- In bowl, combine eggs with water and give a good whisk or stir with a fork.
- Pour egg mixture into an oiled & heated skillet (on medium heat)
- Cook egg mixture for 1 minute and add spinach and tomatoes.
- Cook until egg is firm (about 3 minutes).
- Salt and pepper to taste.
