tofu, shitake, carrot & brussel sprout stir-fry

Tofu, Shitake, Carrots and Brussel Sprouts make up the majority of this stir fry. Stir fry is a great way to make vegetables and tofu and this one is really colorful and delicious!!

Ingredients:

  • 1 container or extra firm tofu cut into cubes
  • 10 baby carrots, sliced once down the middle
  • 10 brussel sprouts, cut lengthwise into quarters
  • 1/2 medium onion cut to bit sized pieces
  • 1 1/2 cups shitake mushroom caps, cut to bite-sized pieces
  • 2 tbsp olive oil
  • 1/4 cup water
  • 1 tsp vegetarian oyster sauce (available online and at some health food stores)
  • 1 tsp bragg liquid aminos (or soy, or tamari sauce)
  • 1 tsp soy sauce
  • salt and pepper to taste

Directions:

  1. heat olive oil in large non stick stirfry pan or wok.
  2. add shitake mushrooms, brussel sprouts, carrots and water.
  3. cover and let vegetables steam, cook for about 5 minutes.
  4. uncover, add tofu and onions and cook another 3 to 5 minutes until vegetables are cooked enough to serve.
  5. Mix oyster sauce, soy sauce and braggs aminos together and pour into stir fry.
  6. Stir sauce into sti rfry.
  7. Serve over rice or noodles, or on it’s own!!

tofu scramble (vegan)

A quick to make tofu scramble is a great scrambled eggs substitute and it can’t be beat for breakfast. Pancakes might give it a run for its money though. Really it’s one of the best dishes in the whole wide world!!! Why not have it for dinner.

Ingredients:

  • 1 package firm or extra firm tofu
  • 1 small onion, chopped finely
  • 2 cloves garlic, chopped – optional
  • 1 tbsp oil
  • 2 tbsp bragg’s amino acids OR soy sauce
  • 1 tsp turmeric (for color, optional – makes it yellow)
  • 1 carrot, minced – optional but it adds some crunch!
  • Salt and pepper to taste

Directions:

  1. In bowl, crumble tofu – just break it up with your hands.
  2. In skillet, add oil and onion and heat at medium temperature. Cook until onions are translucent.
  3. Add garlic and carrots, stir for ~ 1 minute.
  4. Add crumbled tofu, braggs or soy sauce and turmeric.
  5. Stir well and cook over medium heat for approximately 5 minutes.
  6. Salt and pepper to taste.

Yummy loves to grill. All summer… everything. Yes, I’ve even grilled pasta. Tofu gets nice and chewy. Try this grilled tofu. It’s simple and delicious.

Ingredients:

  • 1 package extra firm tofu
  • 2 tbsp olive oil
  • salt
  • dipping sauces

Directions:

  1. Preheat the grill!! This is essential in order to keep the tofu from sticking to the grill.
  2. Drain tofu and slice into 6 large pieces. (small pieces will break apart)
  3. Pat dry surface of tofu with paper towel.
  4. Dip each piece into salted oil to thoroughly coat.
  5. Grill on medium heat for 12 minutes. Flip each piece and grill for another 8 minutes.
  6. Serve with dipping sauces such as soy sauce, peanut sauce, braggs amino acids, A1, etc.

eggless egg salad (vegan)

Eggless egg salad, hmmm, as a lover of egg salad, this tofu based eggless salad cuts the mustard….

Ingredients:

  • 1 package extra firm tofu, drained well
  • 1/3 cup vegannaise
  • 1-2 tbsp yellow mustard
  • 1 tsp onion powder
  • 1 1/2 tsp salt
  • 1 chopped carrot
  • 1-2 pickles, chopped
  • chopped scallions to taste
  • 1/4 tsp turmeric, to give it a yellow color

Directions:

  1. Mash the tofu up in a large bowl.
  2. Add all the ingredients and mix well.
  3. Let stand for a bit to let the ingredients mesh.
  4. Serve on toasted whole grain bread with lettuce and tomato.
