Quinoa (Keen-wa) is a delicious protein, iron and B vitamin-filled grain. It cooks up just like rice and has a bit of a crunch. Use it as a base for salads or stir fries or alone as a side dish. It comes in red, white, multi-colored and who knows what other varieties. It’s really tasty to add to soups or stews as well. Just rinse, add and let in cook with the broth – being sure to add enough water.

Ingredients

  • 1 cup quinoa
  • 2 cups water

Directions:

  1. Rinse quinoa well to reduce bitterness. I put it in a fine strainer and rinse it under cold water.
  2. Place ingredients in a covered pan.
  3. Bring to boil, reduce heat to low.
  4. Simmer for 20 or so minutes until all the water is absorbed.
