Here is a delicious gluten-free, vegan, orange-flavored cake recipe. It uses orange rind and orange juice in the cake batter and the frosting. It’s a subtle orange flavor and scrumptious. Only a few ingredients and simple to make!

Ingredients:

  • 1 1/2 cups gluten free baking flour mix (you can easily buy this now from the store or make your own)
  • 1/2 cup sugar
  • 1 tsp baking soda
  • 1 tsp xanthan gum
  • 1/4 tsp salt
  • grated peel of 1 large orange
  • 4 tbsp vegetable oil
  • 2/3 cup orange juice

*Note: I cut the cake in half and made it a double-layer cake. For a full cake, you could double the recipe above and make 2 8-inch cakes. The frosting recipe would be enough to frost it all.

 

Directions:

  1. Preheat oven to 350 degrees. Oil 8-inch square or round cake pan.
  2. Combine flour, sugar, baking soda, xanthan gum, salt and orange peel in bowl.
  3. Mix orange juice and oil together in separate container and add to the dry ingredients. Mix and stir until smooth.
  4. Pour mixture into the 8-inch pan.
  5. Bake 30 minutes. Prepare frosting (see below).
  6. Cool cake for 5 minutes in pan, then remove and cool for approximately 30 minutes on wire rack – until cool enough to frost.
  7. Frost and add a piece of orange rind for decoration.

Frosting Ingredients:

  • 1/2 stick non-dairy butter
  • 2 tsp grated orange peel
  • 2 tbsp orange juice
  • 1 tsp vanilla
  • 3 cups powdered sugar

Directions for Frosting:

  1. Beat non-dairy butter with electric mixer until light and fluffy and add the orange peel, vanilla and orange juice. Mix well.
  2. Gradually add the powdered sugar and beat until light and fluffy.
