This is our favorite non-diary milk recipe using almonds! It’s so delicious on cereal, in coffee, in smoothies, in recipes, etc. So so yummy.
Creamy, delicious and simple to make.

Ingredients:

  • 1.5 cups soaked whole almonds – approximately 1 cup before soaking – they expand (with skin and all) – water for soaking
  • 3 cups water, water for actual almond milk
  • maple syrup to taste – 1 tsp to 1 tbsp, optional
  • 1/2 tsp salt, optional
  • 2 tsp vanilla, optional

Directions:

  1. Combine almonds and cover with sufficient water for soaking – soak for at least 8 hours or overnight.
  2. Drain almonds and rinse well.
  3. Combine soaked almonds with water in high powered blender. (It’s a 2:1 ratio – almonds to water!)
  4. Blend on high for 1 minute.
  5. Strain mixture thru a nut milk bag, keeping the liquid portion.
  6. Add the other ingredients and stir or blend gently.

Personally I love the addition of the vanilla and sweetener – it just makes it so good!
