OMG this is scrumptious, vegan and gluten-free too. It reminds me of a vegan cheese fettuccine alfredo recipe! 4 servings.

Ingredients:

  • 6 oz sliced shiitakes in 2T olive oil
  • 4 cloves of garlic
  • 3/4 pound gluten-free pasta
  • 1/4 cup vegan butter or spread
  • 1 package of Treeline Aged Cheese (either variety), grated
  • 2 tsp course ground pepper

Directions:

  1. In a large skillet cook 6 oz sliced shiitakes in 2T olive oil until almost done (about 7 minutes).
  2. Smash 4 cloves of garlic (but leave whole) and add to skillet along with another 2T olive oil, and cook until they begin to brown and then turn heat to low, and let simmer while starting the pasta.
  3. Cook 3/4 pound pasta, fresh or dried.
  4. When pasta is almost done take 1 cup of the pasta water and add to skillet.
  5. Remove the garlic cloves.

  6. Add 1/4 cup vegan butter or spread and melt.
  7. Add 1 package of Treeline Aged Cheese (either variety), grated.
  8. Add 2 tsp course ground pepper and mix into a sauce.
  9. Drain the pasta and toss in skillet to mix in with the sauce.
