These shaved brussel sprouts are so delicious. I believe everybody will like them. And of course very simple to make. 4 servings.

Ingredients:

  • 4 cups brussel sprouts
  • 1/3 cup vegetable broth or water
  • 1 1/2 tbsp vegan butter
  • 1/2 tsp salt, if not using broth
  • pepper to taste

Directions:

  1. Wash and trim the bottom off the brussel sprouts
  2. Add brussel sprouts to food processor using slicing blade (can also use a grater)
  3. Melt butter in pan with broth or water, add shaved brussel sprouts
  4. Turn heat to medium, stirring occasionally until brussel sprouts are soft to taste. Around 3-5 minutes
  5. Serve

So simple and so delicious. You can shave up more brussel sprouts and store them uncooked in the refrigerator for a few days. Then just pop them on the stove for a quick side vegetable dish!
